What lingers in the mouth after you swallow — the tea's final, often most revealing, statement.
A great tea's finish keeps unfolding for minutes. Sometimes it sweetens (hui gan); sometimes it returns floral; sometimes it descends into the throat (hou yun). A short finish is a sign of a young or poorly processed tea.
